Nice Cream at it’s best
Do you like exotic flavors as much as I do? If yes, then you have to try this recipe. If not, then you have to try this recipe even more. There is something about blended, melting fruits that I just can’t resist. And it’s super healthy – no sugar added, not at all. You just have to make sure to choose very ripe bananas and a very ripe pineapple for your Exotic Nice Cream.
I made this recipe on Easter Sunday as a dessert, and it was just perfect. If you want to impress your guests, go ahead and serve Exotic Nice Cream. Or just make it for yourself. I almost always make Nice Cream only for myself. Because my kids are not keen on it (for whatever reason) and my hub prefers “real” ice cream. So there is more left for me 😁.
I never use canned pineapple, because it’s too pale and bland compared with a fresh, ripe pineapple. On the contrary, I always have store-bought mango puree in stock. The color and the consistency is so much better than the mangoes you can find in the supermarkets over here. Perfectly ripe mangoes are hard to find. And when you are out of luck, your mango is fuzzy (happens all the time). So, canned mango is what I use in this recipe, but the unsweetened one.
Exotic Nice Cream with Mango Puree
This 3-ingredient Exotic Nice Cream is the easiest dessert ever. Dairy-free, vegan, kids-friendly and delicious.
- 2 bananas
- 4 tbsp pineapple chunks
- 2 tbsp coconut milk or pineapple juice
- 1/2 cup mango puree
- 2 kumquats optional
Peel and chop banana and freeze in a single layer for at least 6 hours.
Freeze pineapple chunks in a single layer for at least 6 hours.
In a high speed blender, blend frozen bananas and pineapple chunks until very smooth. Add a bit of coconut milk or pineapple juice if necessary.
Spoon mango puree in a small jar and top with pineapple nice cream.
Decorate with edible flowers and a few kumquat slices.
Have you ever tried Nice Cream? How did you food processor manage to blend frozen fruits? I use my Moulinex – not the perfect equipment but for small portion sizes just fine. I was thinking about buying a more efficient food processor, but I am not sure about the brand. Any tips are welcome 😘😘!
