Coconut Chia Parfait – The best Chia Pudding EVERRR
Chia Pudding is not for everyone. Some people just don’t like the gooey consistency. But it doesn’t have to be gooey, not all. When I visited London with my daughter in May 2017, we ate at Pret A Manger almost every day because they had a lot of vegan stuff. I lived by their coffee (when you read my 10 fun facts you know I am a soy latte addict 🙈), vegetable boxes, overnight oats and their chia parfait, which consisted of chia seeds and coconut yogurt. The Chia Pudding at Pret a Manger was the best I ever had, and I instantly knew I wanted to recreate it.
I started experimenting the minute we were home again. I nailed it almost immediately; it just took some time to uplodad it to the blog. All you have to do is prepare a chia gel with a little bit of water and mix it with coconut yogurt. The chia parfait at Pret a Manger is unsweetened, but I added a little bit of agave because I have a sweet tooth 🙈. This is totally optional, maybe try without sweetener first and add if necessary. Coconut yogurt is super creamy, and that’s why this chia pudding is not gooey at all but fluffy and yummy.
It’s best to top this Coconut Chia Parfait with compote, berries or mango puree, like above. Mango Puree is my all-purpose answer to everything. It goes well with not only chia pudding, but also with Coconut infused Overnight Oats or Blue Overnight Oats and every kind of dessert. You can use black or white chia seeds, whatever you like more (although the white seeds are more expensive than the regular ones).
The yellow straw flower you see above is so pretty, right? I just wouldn’t recommend to eat it. It’s not toxic, just hard to chew and swallow 🙃 (and NO I did not try). We have one bilberry bush in the garden which has the sweetest blueberries. I didn’t tell anyone they are ripe because I need them for my food pics 😅. We have a few raspberries too but not as pretty as the one you can buy at supermarkets. They are still quite delicious.
At the moment I love to top my Coconut Chia Parfait with Mirabelle jam. We have about three different Mirabelle trees in our garden (yellow, orange and red) and during summer I cook like 15 kg of jam, that we eat all year long. I use a jam sugar 1:3, which means I use 1 part sugar and 3 parts Mirabelles. That’s why this jam is still refreshing sour. When I shot the jar below, I made a little tutorial. Coconut Chia Parfait
- 2 tbsp chia seeds
- 4 tbsp water
- 1/2 cup coconut yogurt
- 2 tsp agave optional
- 1/4 cup compote, mango purree or jam
Mix chia seeds with water and stir thoroughly. Let sit for 15 minutes.
Mix chia gel with coconut yogurt and stir well.
Add agave and stir.
Transfer to a jar and top with compote, jam, mango puree and fresh fruits.
Decorate with edible flowers.
