Semolina Porridge is a dish of my childhood. My mother served it with cherry compote and sprinkled cinnamon and sugar on top. I can’t remember the day when I stopped eating it, but I can pretty much remember the day I started again: I saw a picture of this goodness on the Instagram feed of Alina @plantbasedali_ and I just had to make it. I added a bit of cocoa powder and coconut cream to the original recipe and what should I say? It was so good!! Uber delicious (as the cool kids would say)!
Semolina is a pale-yellow flour ground from wheat. There is a difference between common wheat (soft wheat) and durum wheat (hard wheat). You can use soft wheat semolina for desserts and soups, and hard wheat semolina for noodles and dumplings. For this Chocolate Semolina Porridge recipe, you will need soft wheat semolina. Wholegrain semolina would be an even healthier option, but you don’t have to optimize your diet all the time, right?
I used blood orange slices as a decoration for my Chocolate Semolina Porridge, and I got a lot of questions from concerned instagramers. Is the peel edible or not? You can eat the peel of citrus fruits, as long as they are not chemically treated. The peels of oranges are rich in flavonoids and other phytochemicals. These compounds have anti-inflammatory and antic-cancer properties. So whenever you find organic oranges, don’t discard the peel!
Chocolate Semolina Porridge
- 1 cup oat milk
- 1 tsp coconut cream (optional)
- 1 heaped tsp low-fat cacao powder
- 1 dash of cinnamon
- 3 tbsp semolina made from soft wheat
- 1 tsp coconut sugar
- 1 tsp maple syrup
- edible flowers
- 1 cup fresh or frozen fruits
In a small saucepan, mix plant-based milk, coconut cream, coconut sugar, maple syrup, cinnamon and whisk in cocoa. Bring to the boil and whisk in semolina.
Simmer on low heat, stirring constantly, until all the plant-based milk is absorbed. Transfer to a bowl and top with your favorite fruits and edible flowers.
