Today I am sharing one of my favorite oatmeal recipes with you – Acai Overnight Oats. It’s ridiculously easy to prepare, without refined sugars, and full of fiber and antioxidants. Usually, I use unsweetened plant-based milk to soak Overnight Oats, but I found a brand which has a whole assortment of vanilla flavored plant-based milk, sweetened only with raw cane sugar. For this recipe, I used their Vanilla Soy Milk.
When it comes to plant-based yogurts, I always buy an unsweetened variety. Fruit powders like Acai and fresh fruits compensate for the missing sweetness. Acai is grown in South America and is a staple for many people. Unfortunately, they waste very quickly, so you won’t be able to buy fresh Acai Berries outside of the Amazonas region. But there are a ton of powdered products out there, with different shades of purple. I found an acai powder that’s bright pink.
Why you should consider adding Acai to your diet
Acai is recognized as one of the foods with the highest content of antioxidants. The antioxidants found in Acai berries are anthocyanins, purple pigments, which can prevent heart disease. They are also an excellent source of the Vitamins C, A, B1, B2, B3 and E, and the minerals calcium, iron and copper. Of course, adding acai to your diet is not a replacement for an overall healthy diet, high in plant-based food and low in fat. But it might give your immune system an extra boost, and it prevents the hardening of your arteries.
I calculated this recipe for 4 servings, but usually my kids (12 and 14 years old) and me, we eat it all in one session. Feel free to serve these Acai Overnight Oats in small bowls decorated with banana slices and berries, or in a jar and adding additional layers with home-made jam or compote. If you want to add a few colored sprinkles, just mix coconut flakes with beet powder or blue spirulina.

Acai Overnight Oats (family-size)
Vegan recipe for vanilla flavored Acai Overnight Oats with berries and shredded apple.
- 2 cups old-fashioned rolled oats
- 2 cups vanilla flavored soy milk
- 1 tbsp golden flax
- 1 tbsp chia
- 1.5 cup soy yoghurt
- 6 tbsp acai powder
- 1 shredded apple
- 1 cup mixed berries
- 1 cup blackberries, blueberries or pomegranate
- 2 bananas
- 1/2 cup dried mulberries
- 2 tbsp raw cacao nibs
- edible flowers
Gently mix oatmeal, vanilla soy milk, flax seeds, chia seeds, soy yogurt, acai powder, shredded apple, and mixed berries and soak overnight.
Transfer to small bowls or jars and decorate with banana slices, fresh berries, dried mulberries, raw cacao nibs, and edible flowers.
